Salmon Fillet with a Twist
Ingredients:
- 4 x Regal 120-140g Salmon Fillet Portions, fresh or defrosted
- ½ Lemon, squeezed
- Balsamic Bianco Vinegar
- Fresh chopped Chives
Method:
1) Line baking tray with foil and sprinkle some Balsamic Bianco vinegar into the bottom of the tin with lemon zest and some of the chives.
2) Lay the fillets of salmon in the tray; sprinkle with lemon juice, vinegar and the rest of the chives.
3) Let stand for 20 minutes.
4) Cook in the oven 10-15 minutes, till tender.
Serve with broccoli and new potatoes
