Pesto Salmon Pasta
Ingredients:
- 227g Regal Smoked Salmon, chopped
- 225g Tagliatelle, cooked
- 1 Onion, chopped
- 1 Clove Garlic, crushed
- 140g Mushrooms, sliced
- 175g Pesto
- 50g Tomato Paste
- 60ml Water
- 30ml Olive Oil
- Chopped fresh Basil
Method
1) In a frying pan, heat the olive oil and add the onion, mushrooms and garlic until cooked through. Stir in tomato paste, pesto, basil, water and smoked salmon.
2) Simmer for 5 - 10 minutes, or until desired consistency is achieved.
3) Serve on a bed of warm pasta.
