Pesto Salmon Pasta

Ingredients:

  • 227g Regal Smoked Salmon, chopped
  • 225g Tagliatelle, cooked
  • 1 Onion, chopped
  • 1 Clove Garlic, crushed
  • 140g Mushrooms, sliced
  • 175g Pesto
  • 50g Tomato Paste
  • 60ml Water
  • 30ml Olive Oil
  • Chopped fresh Basil

Method

1) In a frying pan, heat the olive oil and add the onion, mushrooms and garlic until cooked through. Stir in tomato paste, pesto, basil, water and smoked salmon.

2) Simmer for 5 - 10 minutes, or until desired consistency is achieved.

3) Serve on a bed of warm pasta.
