Cashew Crusted Salmon
Ingredients:
- 2 x 140-160g Regal Boned Salmon Fillet, fresh or defrosted
- Handful Raw Cashew Nuts
- 5 tbsps Parmesan Cheese
- 1 tsp fresh Basil, chopped
- 3/4 tbsp Olive Oil
Method:
- Preheat oven to 180°C/450°F/Gas Mark 4.
- Combine the cashews, parmesan cheese, basil and olive oil in a food processor and pulse until mixture is fine.
- Top a baking tray with foil and place the salmon on top of the foil.
- Top the salmon with the mixture and place another sheet of foil over the salmon, sealing the fish within the foil.
- Bake for 8-10 minutes before removing foil and baking for another 3 – 5 minutes until the fish is fully cooked and allowing the topping to brown slightly.
- Serve immediately with your choice of vegetables or salad.
