Cashew Crusted Salmon

Ingredients:

  • 2 x 140-160g Regal Boned Salmon Fillet, fresh or defrosted
  • Handful Raw Cashew Nuts
  • 5 tbsps Parmesan Cheese
  • 1 tsp fresh Basil, chopped
  • 3/4 tbsp Olive Oil

Method:

  1. Preheat oven to 180°C/450°F/Gas Mark 4.
  2. Combine the cashews, parmesan cheese, basil and olive oil in a food processor and pulse until mixture is fine.
  3. Top a baking tray with foil and place the salmon on top of the foil.
  4. Top the salmon with the mixture and place another sheet of foil over the salmon, sealing the fish within the foil.
  5. Bake for 8-10 minutes before removing foil and baking for another 3 – 5 minutes until the fish is fully cooked and allowing the topping to brown slightly.
  6. Serve immediately with your choice of vegetables or salad.
