Balsamic Glazed Salmon Portions
Ingredients:
- 4 x 120-140g x Regal Salmon Portions, defrosted
- 1 tbsp Olive Oil
- 4 cloves Garlic, minced
- 1 tbsp White Wine
- 1 tbsp Honey
- 85ml Balsamic Vinegar
- 2 tbsps Dijon Mustard
- Freshly ground Black Pepper to taste
- 1 tbsp chopped fresh Oregano
Method:
Preheat oven to 200 C / Gas mark 6.
- Line a baking tray with baking parchment.
- Heat olive oil in a small saucepan over medium heat; add the garlic and cook until soft.
- Mix in the white wine, honey, balsamic vinegar, mustard and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
- Take off the heat and add oregano.
- Arrange salmon fillets on prepared baking tray and brush fillets with some of the balsamic glaze.
- Bake in preheated oven for 12 -14 minutes, or until flesh flakes easily with a fork. Brush fillets with any remaining glaze.
- Serve with salad and new potatoes using any spare glaze as a dressing.
