Balsamic Glazed Salmon
Ingredients:
- 2 x Regal Organic Salmon Fillet Portions, defrosted
- 1 Clove Garlic, minced
- 1 tbsp White Wine
- 1 tbsp Honey
- 25ml Balsamic Vinegar
- 1 tbsp Dijon Mustard
- 1 tbsp Vegetable Oil
- Salt and Pepper to taste
- Fresh Oregano, chopped
Method:
1) Preheat oven to 200°C. Line a baking sheet with aluminium foil and brush with a little oil.
2) Heat the remaining oil in a saucepan over medium heat; stir in garlic and cook until soft.
3) Mix in the white wine, honey, balsamic vinegar, mustard, salt and pepper. Simmer for about 3 minutes until slightly thickened.
4) Arrange salmon fillets on the baking sheet. Brush with balsamic glaze and sprinkle with the oregano.
5) Bake in pre-heated oven for 12 to 16 minutes or until flesh flakes easily with a fork.
6) Brush fillets with remaining glaze, season with salt and pepper and serve.
