Baked Mackerel
Ingredients:
- 2 Regal Whole Mackerel, fresh or defrosted
- 25g Butter, softened
- ½ tsp Cayenne
- 1½ tsp Paprika
- 2tsp English Mustard
- 1tbsp Balsamic Vinegar
- 1½ tsp Brown Sugar
Method:
- Preheat the oven to 200°C/180°C Fan/Gas Mark 6.
- Score the skin of the mackerel and place in an ovenproof dish.
- Mix the butter with the cayenne, paprika, mustard, balsamic vinegar and sugar - spread over the scored skin and inside the fish.
- Bake for 20 minutes or until flesh in the cuts is opaque and firm.
- Serve with new potatoes and vegetables.
