Baked Mackerel

Ingredients:

  • 2 Regal Whole Mackerel, fresh or defrosted
  • 25g Butter, softened
  • ½ tsp Cayenne
  • 1½  tsp Paprika
  • 2tsp English Mustard
  • 1tbsp Balsamic Vinegar
  • 1½ tsp Brown Sugar

Method:

  1. Preheat the oven to 200°C/180°C Fan/Gas Mark 6.
  2. Score the skin of the mackerel and place in an ovenproof dish.
  3. Mix the butter with the cayenne, paprika, mustard, balsamic vinegar and sugar - spread over the scored skin and inside the fish.
  4. Bake for 20 minutes or until flesh in the cuts is opaque and firm.
  5. Serve with new potatoes and vegetables.
