Salmon on the BBQ
Salmon makes a pefect fish for the BBQ. Try this tasty recipe allowing one portion per person.
Once the BBQ is ready for cooking, place the fish on the BBQ skin side up for 3-4 minutes. Turn it over and brush with BBQ sauce (use your favorite supermarket one or russle up your own - recipe below) and continue to cook for another minute, turn again and give it another 30 seconds. Note the cooking time is dependant on size and thickness of fish so adjust to suit. Serve with BBQ roasted potato wedges and salad.
BBQ Sauce
- 1/2 Onion, finely chopped
- 1 clove Garlic, minced or pressed
- 2 tbsps Butter
- 240ml Tomato Ketchup
- 4 tbsps Brown Sugar
- 4 tbsps fresh Lemon Juice
- 1 tbsp Worcestershire Sauce
- 1 tsp Mustard (your choice: Dijon, German, English)
- 1/8 tsp Tabasco Sauce
In a small saucepan, sauté onion and garlic in the butter until tender. Add the remaining ingredients and bring to a boil. Reduce heat and simmer uncovered for 15 to 20 minutes.
