Mustard Topped Flat Fish

Ingredients:

  • 2 x Regal Plaice or Lemon Sole Fillets, fresh or defrosted
  • 2 Leeks, washed and thinly sliced
  • 25g Butter
  • 2 tsp Dijon Mustard
  • 2 tbsps Mayonnaise
  • Lemon Juice

Method:

  1. Melt the butter in a saucepan.  Add the leeks, toss well then cover and cook until soft (approx. 5 mins).  Season.
  2. Season the fish fillets and lay on a buttered baking tray.
  3. Mix the mustard and mayonnaise with a dash of lemon juice; spread the mixture over the fillets.
  4. Pre-heat the grill and cook for 6-8 minutes until golden brown and cooked through.
  5. Serve immediately with the cooked leeks.
