Mustard Topped Flat Fish
Ingredients:
- 2 x Regal Plaice or Lemon Sole Fillets, fresh or defrosted
- 2 Leeks, washed and thinly sliced
- 25g Butter
- 2 tsp Dijon Mustard
- 2 tbsps Mayonnaise
- Lemon Juice
Method:
- Melt the butter in a saucepan. Add the leeks, toss well then cover and cook until soft (approx. 5 mins). Season.
- Season the fish fillets and lay on a buttered baking tray.
- Mix the mustard and mayonnaise with a dash of lemon juice; spread the mixture over the fillets.
- Pre-heat the grill and cook for 6-8 minutes until golden brown and cooked through.
- Serve immediately with the cooked leeks.
