Lemony Fish Fillets

IngredientsLemony Fish Fillets:

  • 4 x Regal Plaice or Lemon Sole Fillets, fresh or defrosted, skinned
  • 1 Small Green Pepper, deseeded and thinly sliced
  • 2 Tomatoes, chopped
  • 2 x 15ml spoon (2 tbsps) Dry White Wine
  • Juice and rind of half a Lemon
  • Salt and Pepper
  • 1 x 15ml spoon (1 tbsp) Fresh chopped Parsley

Method:


1) Preheat the oven to 190°C/375°F/Gas Mark 5.


2) Lightly grease a large ovenproof dish and add the pepper and tomatoes.


3) Skin the fillets, fold in half and place into the dish. Add the wine, lemon and seasoning.


4) Lightly cover and bake for 15 minutes or until the fish is cooked.


5) Garnish with the parsley and serve with pasta or potatoes.
