Lemon Sole with Parma
Ingredients:
- 2 x Regal Lemon Sole Fillets, skinned, fresh or defrosted
- 4 Slices Parma or Black Forest Ham
- 6 Cherry Tomatoes, halved, oiled and seasoned
- Lemon Juice
- Lemon Slices
- Salt & Black Pepper
Method:
- Pre-heat the grill to a medium heat.
- Cut each fillet in half to make 4 strips, season and fold in half.
- Wrap each folded piece with a strip of Parma, secure with a cocktail stick if necessary.
- Sprinkle with lemon juice and place under the grill for 3-5 minutes along with the cherry tomatoes until cooked through.
- Serve immediately with the tomatoes, lemon slices and creamy mashed potatoes.
