Lemon Sole with Parma

Ingredients:

  • 2 x Regal Lemon Sole Fillets, skinned, fresh or defrosted
  • 4 Slices Parma or Black Forest Ham
  • 6 Cherry Tomatoes, halved, oiled and seasoned
  • Lemon Juice
  • Lemon Slices
  • Salt & Black Pepper

Method:

  1. Pre-heat the grill to a medium heat.
  1. Cut each fillet in half to make 4 strips, season and fold in half.
  1. Wrap each folded piece with a strip of Parma, secure with a cocktail stick if necessary.
  1. Sprinkle with lemon juice and place under the grill for 3-5 minutes along with the cherry tomatoes until cooked through.
  1. Serve immediately with the tomatoes, lemon slices and creamy mashed potatoes.
