Whole Fish "Med" Style

Ingredients:

  • 1 Whole Regal Red Fish, defrosted and gutted
  • Handful fresh chopped Herbs such as parsley, basil, oregano, thyme and rosemary
  • Rosemary Sprigs
  • 1 Lemon, halved, 1 half sliced into rounds

Method:

1. Preheat oven to 200°C

2. Score the flesh on both sides of the fish and place on a large piece of foil; fill the cavity with the rosemary sprigs and lemon slices

3. Sprinkle the fish with the chopped herbs and squeeze over the juice from the remaining half of lemon

4. Wrap the foil in a parcel and bake (or can bbq) for about 15-20 minutes or until cooked through (flesh will be white and flake easily)

5. Serve immediately with spinach wilted in a little olive oil and garlic
