Tuna Stew
Ingredients:
- 2 x Regal Tuna Steaks, fresh or defrosted, diced
- 1 Spanish Onion, peeled and chopped
- 2 Garlic Cloves, chopped
- 400g Potatoes, peeled and diced
- 3 Green Peppers, deseeded and cut into bite sized pieces
- 2 Plum Tomatoes, roughly chopped
- Salt & Pepper
- 2 tbsps Olive Oil
Method:
- Fry the onions in the oil with the garlic until softened.
- Add the potatoes and peppers to a large saucepan and add enough water to cover. Bring to the boil, cover and simmer until the potatoes are nearly cooked.
- Add the other ingredients, stir and bring back to the boil. Cover and simmer for approx. 5 minutes or until the tuna is cooked.
- Serve with plenty of crusty white bread.
