Tuna Stew

Ingredients:

  • 2 x Regal Tuna Steaks, fresh or defrosted, diced
  • 1 Spanish Onion, peeled and chopped
  • 2 Garlic Cloves, chopped
  • 400g Potatoes, peeled and diced
  • 3 Green Peppers, deseeded and cut into bite sized pieces
  • 2 Plum Tomatoes, roughly chopped
  • Salt & Pepper
  • 2 tbsps Olive Oil

Method:

  1. Fry the onions in the oil with the garlic until softened.
  2. Add the potatoes and peppers to a large saucepan and add enough water to cover.  Bring to the boil, cover and simmer until the potatoes are nearly cooked.
  3. Add the other ingredients, stir and bring back to the boil.  Cover and simmer for approx. 5 minutes or until the tuna is cooked.
  4. Serve with plenty of crusty white bread.
