Tuna Crusted with Coriander and Peppercorns
Ingredients:
- 4 x Regal Tuna Loin Steaks, fresh or defrosted
- 1.5 x 15ml spoons (1½ tbsp) mixed Peppercorns
- 2 x 15ml spoons (2 tbsp) Coriander Seeds
- 1 x 5ml spoon (1 tsp) Olive Oil
Method
1) Place the peppercorns and coriander seeds in a pestle and mortar and crush lightly.
2) Heat the griddle pan over a high heat.
3) Brush the tuna with the oil, do not worry if you do not use all of the oil. Spoon the crushed seeds over the tuna steaks and press into the flesh lightly.
4) Griddle the tuna for 3-4 minutes on each side.
Serve with stir-fry noodles and vegetables.
