Taste of Thailand - Grilled Tuna with Lime & Coriander

Ingredients:

  •  4 x Regal Tuna Loin, defrosted
  •  1 tbsp Groundnut Oil
  •  1 tbsp Fish Sauce
  • 2 tbsps Dark Soy Sauce
  • 2 tsps Soft Brown Sugar
  • 2 tbsps Lime Juice
  • 2 tbsps Fresh Coriander, chopped
  • Red Chilli, deseeded and finely chopped
  • 75g Spinach Leaves
  • Lime Wedges

Method:

  1. Mix together the oil, fish sauce, soy sauce, sugar, lime juice, coriander and chilli.
  2. Place the fish into a shallow dish and pour over the mixture.  Chill for at least 30 minutes or for as long as possible.
  3. Heat the BBQ or grill and cook the fish for 2 to 3 minutes each side or until cooked through.
  4. Meanwhile pour the remaining marinade into a wok, heat until bubbling and reduced by half, add the spinach and heat until wilted.
  5. Spoon the mixture over the fish and spoon the juices over.  Serve with lime wedges and salad.
