Taste of Thailand - Grilled Tuna with Lime & Coriander
Ingredients:
- 4 x Regal Tuna Loin, defrosted
- 1 tbsp Groundnut Oil
- 1 tbsp Fish Sauce
- 2 tbsps Dark Soy Sauce
- 2 tsps Soft Brown Sugar
- 2 tbsps Lime Juice
- 2 tbsps Fresh Coriander, chopped
- Red Chilli, deseeded and finely chopped
- 75g Spinach Leaves
- Lime Wedges
Method:
- Mix together the oil, fish sauce, soy sauce, sugar, lime juice, coriander and chilli.
- Place the fish into a shallow dish and pour over the mixture. Chill for at least 30 minutes or for as long as possible.
- Heat the BBQ or grill and cook the fish for 2 to 3 minutes each side or until cooked through.
- Meanwhile pour the remaining marinade into a wok, heat until bubbling and reduced by half, add the spinach and heat until wilted.
- Spoon the mixture over the fish and spoon the juices over. Serve with lime wedges and salad.
