Seared Sword Fish with Mango Salsa
Ingredients:
- 2 x Regal Swordfish Steaks, defrosted
- Half a Mango, peeled and sliced
- 1 Red Chilli, deseeded and finely chopped
- 2 Spring Onions, thinly sliced
- 1 Lime, zest and juice
- Olive Oil
- Coriander & chopped salad leaves to serve
Method:
1) Rub the oil over the fish and season (you can also use a rub seasoning if desired).
2) Cook for 3 mins each side on the BBQ, until charred and just cooked through
3) For the salsa, toss together the mango, spring onions, chilli, lime zest and juice and coriander.
4) Serve the grilled fish with salsa and salad leaves
The salsa also goes with grilled tuna steak or salmon.
