Seared Exotic Fish Steaks with Fennel & Thyme
Ingredients:
- 4 x Regal Tuna or Swordfish Steaks, defrosted
- Salt and Pepper
Marinade:
- 3 x 15ml spoon (3 tbsp) Pernod
- 2 x 15ml spoon (2 tbsps) Olive Oil
- Grated rind and juice of 1 Lemon
- 2 x 5ml spoon (2 tsps) fresh Thyme Leaves, chopped
- 2 x 5ml spoon (2 tsps) Fennel Seeds, crushed
Method:
1) Season the fish and place in a shallow dish.
2) Mix the Pernod, oil, lemon rind and juice, thyme and fennel in a bowl. Pour over the fish and leave to marinate for 1-2 hours.
3) Pre-heat a lightly oiled griddle pan or a heavy-based frying pan, over a high heat. When hot, cook the fish for 3-4 minutes on each side.
4) Serve with a green salad and crusty bread.
