Oriental Swordfish
Ingredients 
- 4 x 170g (6 oz) Regal Swordfish or Tuna Loin Steaks, fresh or defrosted
- 1 x 15ml spoon (1 tbsp) Soy Sauce
- 2 Spring Onion, finely sliced
- 1 Small Red Chilli, finely chopped
- 2.5cm (1inch) fresh Ginger, peeled and grated
- Juice and zest of 1 Lime
- 1 x 15ml spoon (1 tbsp) Olive Oil
- Shredded Spring Onion and Red Chilli, to garnish
Method:
1) Mix the soy sauce, spring onion, chilli, ginger, lime juice and zest in a bowl.
2) Place the fish in shallow bowl and pour over the marinade. Cover and marinate for at least 15 minutes.
3) Brush a heavy based frying pan over a high heat. Take the fish out of the marinade and pat dry, reserve the marinade. Cook the fish for 3-4 minutes, turn over and cook for a further 3 minutes. Add the marinade and heat until bubbling.
4) Serve the fish and marinade with white rice, garnished with the shredded spring onion and red chilli.
