Oreo with Parmesan Crust

Defrost the Oreo Fillets (allowing 2 per person).
Make a salsa by microwaving 1 chopped onion and 1 clove of garlic on high for 2-3 minutes. Add a large tin of chopped tomatoes, 1 teaspoon of tomato puree and a good pinch of chilli flakes to taste (you may wish to add cayenne pepper too if you like it hot!) Heat through in the microwave and season to taste. Add a pinch of sugar to bring out the flavour of the tomatoes if desired.
Dip each fillet in milk followed by a 50/50 mix of plain flour and grated parmesan.
Shallow fry the coated fillets in vegetable oil until cooked through and golden brown.
Serve with the chunky tomato and chilli sauce.
