Exotic Fish Steaks with Sweet Potato Cakes
Prepare sweet potato cakes by combining cooked and mashed sweet potato with cooked and mashed potato; add chopped spring onion and beaten egg to bind. Form into cakes on a floured surface and chill before shallow frying until heated through.
For the Cajun Fish Steaks – cut the tuna or swordfish into strips (allow one steak per person) and toss in Cajun spice mix to coat. Shallow fry the strips until cooked through and serve with the sweet potato cakes and salad.
