Irish Prawns
Ingredients:
- 454g Regal Peeled Scampi Meat, thawed and dried on paper towel
- 2 Shallots, peeled and diced
- Butter
- 4oz Button Mushrooms, sliced
- 2 tbsps Herbed Cream Cheese
- 1 Carton of Double Cream
- Cornflour to thicken
- 1 x Shot of Irish Whisky
- 454g Boiled Potatoes, thinly sliced
- Cheddar Cheese, grated
Method:
1) Preheat oven to 220°C.
2) Sauté the shallots in butter to soften. Season with salt and pepper.
3) Add prawns and sliced mushrooms and cook for 3-4 minutes. Add the cream and cream cheese. Stir continuously until the mixture starts to simmer.
4) Add the whiskey to the corn flour and mix thoroughly, add to the prawns and pour into an ovenproof dish.
5) Layer the mixture with sliced potatoes, top with grated cheese and bake until golden brown (approximately 25 minutes).
6) Serve with crusty white bread and green vegetables
Chefs Tip
Baileys can be used instead of Irish whiskey. This dish works great for any type of shellfish or try adding strips of smoked salmon.
