Summer Seafood - Very Posh Tuna Burger
Ingredients:
- 3 x Regal Tuna Loin Portions, defrosted
- 1 Red Chilli deseeded
- A bunch of Coriander
- 2 Shallots, peeled
- 3 tbsp Ketjap Manis (this is a sweet thick Indonesian soy sauce, if you can’t find it make your own by mixing equal parts dark soy and sugar)
- 1 Egg
- 1 Lime, zested and juiced
Method:
- Put chilli, coriander and shallots in a food processor and wiz until chopped. Add the tuna chunks, 1 tbsp of ketjap manis (or own made) the egg and lime zest. Grind in some black pepper and pulse until combined.
- Divide into 6, and shape into burgers. Brush all over with oil.
- Put the burgers on the grill and brush with the remaining kepjap manis. Grill for 4 minutes each side.
- Serve in warm toasted ciabatta with sweet chilli sauce
