Marinated Exotic Fish
Ingredients:
- 4 portions of Regal Wahoo , Tuna, Mahi Mahi or Red Snapper, defrosted
- 2 tbsps Spring Onions, chopped
- 2 tbsps Olive Oil
- 2-3 Garlic Cloves, minced
- 1 tbsp fresh Ginger, peeled and minced
- ½ tsp Sesame Oil
- 2 tbsps Balsamic Vinegar
- 2 tbsps Soy Sauce
- 1 tbsp Brown Sugar
- ¼ tsp Sea Salt
- ¾ tsp crushed Red Pepper Flakes
Method:
- Preheat the grill or barbecue.
- Combine all other ingredients except the fish in to a bowl, mix thoroughly, let stand 15-20 minutes then mix again before pouring over the fish.
- Cover and marinate the fish for at least one hour in the refrigerator, preferably two.
- Grill or barbecue for 2-3 minutes each side until cooked through.
- Serve with salad and couscous.
