Marinated Exotic Fish

Ingredients:

  • 4 portions of Regal Wahoo , Tuna, Mahi Mahi or Red Snapper, defrosted
  • 2 tbsps Spring Onions, chopped
  • 2 tbsps Olive Oil
  • 2-3 Garlic Cloves, minced
  • 1 tbsp fresh Ginger, peeled and minced
  • ½ tsp Sesame Oil
  • 2 tbsps Balsamic Vinegar
  • 2 tbsps Soy Sauce
  • 1 tbsp Brown Sugar
  • ¼ tsp Sea Salt
  • ¾ tsp crushed Red Pepper Flakes

Method:

  1. Preheat the grill or barbecue.
  2. Combine all other ingredients except the fish in to a bowl, mix thoroughly, let stand 15-20 minutes then mix again before pouring over the fish.
  3. Cover and marinate the fish for at least one hour in the refrigerator, preferably two.
  4. Grill or barbecue for 2-3 minutes each side until cooked through.
  5. Serve with salad and couscous.
