Lime Grilled Exotic Fish
Ingredients:
- 4 portions of Regal Mahi Mahi, Red Snapper, Wahoo or Tuna, defrosted
- 1 tsp Dijon Mustard
- 2-3 limes, freshly squeezed (to taste)
- Freshly ground Black Pepper & Salt
- 1 Clove Garlic, finely chopped
- 1 tsp grated fresh ginger root (optional)
- 2 tbsps Olive Oil
- 1 tbsp Soy Sauce
Method:
- Heat the bbq or grill.
- In a small bowl, whisk together the lime juice, olive oil, garlic, soy sauce, optional ginger root, mustard, salt and pepper.
- Brush the fish with about ½ of the dressing and reserve the rest.
- Place the fish portions under the grill or on the bbq and cook to for 3 -4 minutes. Turn over, brush with the remaining dressing and cook for a further 3-4 minutes or until cooked.
