Cedar Plank Fish - Maple Glaze

Ingredients:

  • 4 x150-200g Boned Salmon Fillet Portions, fresh or defrosted
  • 250ml Maple Syrup
  • 2 tbsps Ginger, finely chopped
  • 4 tbsps fresh Lemon Juice
  • 3 tbsps Soy Sauce
  • 1½ tsps Garlic, minced
  • Cedar plank, soaked in water for 1-2 hours
  • Bunch of Spring Onions, sliced

Method:

  1. Light the barbecue.
  2. In a saucepan add the maple syrup, ginger, 3 tbsps of the lemon juice, soy sauce and garlic, season to taste and simmer for about 30 minutes until reduced, leave to cool to room temperature
  3. Lightly oil the plank.
  4. Arrange the spring onions in one layer on plank
  5. Stir in remaining tablespoon of lemon juice to the syrup.
  6. Put salmon, skin side down on top of the spring onions and brush with the maple glaze.
  7. Season salmon with salt and pepper and place the plank onto the barbecue – leave there until cooked through (approx 15-20 minutes). You may wish to spray the plank occasionally with water to prevent it burning.
  8. Once cooked to your liking, serve drizzled with any remaining sauce mix (you may need to warm this through to return it back to a ‘sauce’ consistency.
