Cedar Plank Fish - Maple Glaze
Ingredients:
- 4 x150-200g Boned Salmon Fillet Portions, fresh or defrosted
- 250ml Maple Syrup
- 2 tbsps Ginger, finely chopped
- 4 tbsps fresh Lemon Juice
- 3 tbsps Soy Sauce
- 1½ tsps Garlic, minced
- Cedar plank, soaked in water for 1-2 hours
- Bunch of Spring Onions, sliced
Method:
- Light the barbecue.
- In a saucepan add the maple syrup, ginger, 3 tbsps of the lemon juice, soy sauce and garlic, season to taste and simmer for about 30 minutes until reduced, leave to cool to room temperature
- Lightly oil the plank.
- Arrange the spring onions in one layer on plank
- Stir in remaining tablespoon of lemon juice to the syrup.
- Put salmon, skin side down on top of the spring onions and brush with the maple glaze.
- Season salmon with salt and pepper and place the plank onto the barbecue – leave there until cooked through (approx 15-20 minutes). You may wish to spray the plank occasionally with water to prevent it burning.
- Once cooked to your liking, serve drizzled with any remaining sauce mix (you may need to warm this through to return it back to a ‘sauce’ consistency.
