Flaky Smoked Salmon Kedgeree
Ingredients
200g Whole grain brown rice
400g Hot Smoked Salmon broken into flakes
2 Eggs, hard-boiled
Butter
3 Medium sized onions, chopped
12 Mushrooms, sliced
Salt and freshly ground black pepper
Good handful of freshly chopped parsleyMethod
1) Put the rice on to cook, chop the hard-boiled eggs. Fry the onions in until dark golden brown, remove and drain reserving the butter in the pan.
2) Quickly toss the mushrooms in the hot butter. Combine the cooked rice, hot smoked salmon, chopped eggs, fried onions and mushrooms in a large serving bowl, season and warm through (the kedgeree must be piping hot when you eat it), sprinkle with the chopped parsley. Serve with a green salad.
