Pam's Fish Pie
12oz Regal Cod Fillet, fresh or defrosted1 Regal Smoked Mackerel Fillet, fresh or defrosted
2 Eggs, hardboiled and quartered
White Sauce Mix
Ready prepared Dill Sauce
Mashed Potato
Method
:1) Preheat the oven to 200°C/Gas Mark 6
2) Poach fish in enough milk to cover for approximately 4 minutes in the microwave
3) Leave to cool, drain and reserve milk
4) Skin fish and flake into a dish, mixing evenly
5) Arrange egg quarters over the fish
6) Season to taste with salt and pepper
7) Make up the white sauce with the reserved milk to a pouring consistency
8) Stir in a teaspoon of dill sauce
9) Pour the white sauce over the fish
10) Spread the mashed potato evenly over the fish mixture and rough up the surface using a fork
11) Dot butter over the top
12) Bake until golden and crispy on top
NB Prawns can be added to the fish mixture if desired.
