Smoked Mackerel Pizza

2 x Regal Smoked Mackerel Fillets, fresh or defrosted

1 Ciabatta loaf, quartered

1 tube tomato puree

4 cherry tomatoes, cut in to thin wedges

150g Mozzarella cheese, grated

Fresh thyme leaves





Method





1) Preheat oven to 200C/400F/Gas Mark 6 and bake the ciabatta bread cut side up for 10 minutes until crisp.



2) Flake the smoked mackerel and remove any skin and bones.



3) Spread the tomato puree over the bread and top with the tomato wedges, smoked mackerel and mozzarella cheese.



4) Bake for 20 minutes until the cheese has melted.



5) Garnish with thyme and serve with a fresh salad.
