Prawns with Sweetcorn
Ingredients
675g (1½ lbs) Regal Raw King Prawns, defrosted and shelled
45ml (3 tbsps) Oil
1 Clove garlic, minced
1 Small piece ginger root, minced
60ml (4 tbsps) Light vegetable stock
60ml (4 tbsps) Light soy sauce
60ml (4 tbsps) Rice wine
10g (2 tsps) Cornflour
30g (2 tbsps) Chopped coriander
50g (2oz) Mange tout
100g (4oz) Baby sweetcorn, sliced lengthways

Method
1) Heat a microwaveable dish for 5 minutes on high.
2) Shell and de-vein the prawns. Add the oil and prawns to the dish.
3) Add the garlic and ginger and cook for 1-2 minutes on high, stirring often.
4) Combine the stock, soy sauce, wine and cornflour. Pour over the prawns and cook for 3 minutes on medium, stirring halfway through cooking time.
5) Cut the stalks off the mange tout and add with the sweetcorn to the dish. Cook for 1-2 minutes on medium until the sauce thickens and clears.
6) Sprinkle with coriander and serve on a bed of rice or noodles.
