Mussels Au Gratin
Ingredients
454g (1lb) Regal Blanched Mussels, defrosted
55g (2oz) freshly chopped parsley
2 cloves of garlic, peeled and crushed
6 x 15ml (6 tbsps) breadcrumbs
6 x 15ml (6 tbsps) Parmesan cheese, grated
Grated rind of 1 lime and juice of half a lime
Salt & black pepper
6 x 15ml (6 tbsps) olive oil
Method
1) Preheat the oven to 200C/400F, Gas Mark 6
2) Mix together the parsley, garlic, breadcrumbs, cheese, grated rind of one lime and juice of half the lime. Season and mix with the olive oil. Blend thoroughly.
3) Spilt the mussels in half and discard the empty shells. Spread mussel meats on the remaining half shells with the breadcrumb mixture and arrange in a shallow ovenproof dish.
4) Bake for approximately 15-20 minutes until golden brown.
5) Arrange on a plate and serve immediately.
