Halibut with Melted Cheese Topping
Ingredients
4 x Regal Halibut Steaks, fresh or defrosted
Salt and black pepper
30g (1oz) Butter, melted
1 Small onion, finely chopped
115g (4oz) Mushrooms, finely chopped
1 x 5ml spoon (1 tsp) dried tarragon
1 x 15ml spoon (1 tbsp) lemon juice
115g (4oz) Cheddar cheese, grated
Tomato and tarragon, to garnishMethod
Preheat the grill
1) Place the halibut steaks onto a grill pan, season and brush with a little melted butter.
2) Grill under a moderate heat for 4-5 minutes whilst preparing the topping.
3) Cook the vegetables in the remaining butter with the tarragon. Add the lemon juice and season to taste.
4) Turn over the fish and divide the topping between the steaks. Sprinkle with grated cheese, continue cooking under the grill for another 4 minutes, until topping is golden and fish is cooked.
Garnish and serve hot with a crisp, green salad.
