Marinated Swordfish Steaks

Ingredients

4 x Regal Swordfish Steaks, defrosted

Wedges of lemon



Marinade

4 tbsps Olive oil

4 tbsps Lemon juice

4 Spring onions, chopped

1-2 Cloves of garlic, chopped

1in (2.5cm) Fresh ginger, chopped

Dash of chilli sauce

Ground black pepper

Olive oil for basting


Method

1) It is best to use a food processor or blender to prepare the marinade.

2) Place all the ingredients into the bowl and blend into a smooth paste.

3) Wash the steaks, pat them dry and smother them with marinade and leave in a bowl for 1-2 hours.

4) Heat the grill, brush each steak with oil and cook each side for 2-3 minutes.

5) Serve immediately with wedges of lemon.

Serves: 4
