Monkfish with Cheese and Leek Topping
Ingredients
500g Regal Monkfish Fillets, fresh or defrosted
½ Leek, chopped finely
Fresh Parmesan cheese, gratedMethod
1) Heat grill pan to a medium heat.
2) Mix the leek and cheese together and sprinkle on top of the monkfish.
3) Grill for 15-20 minutes until cheese has melted and monkfish is cooked.
4) Serve hot with creamy mashed potato and broccoli.
