Barbecued Sardines

Ingredients



12 Regal Sardines, defrosted

12 Sprigs fresh oregano

Olive oil

Lemon Juice

Salt and pepper

1 tbsp Dried oregano



Method





1) Preheat the BBQ.


2) Gut, clean and dry the sardines. Place one sprig of oregano inside the cavity of each fish.


3) Make two slits on each side of the fish and brush with the oil, squeeze over lemon juice and season with salt and pepper.


4) Sprinkle the dried oregano over hot coals, and place the sardines on the BBQ for 3 - 4 minutes per side, basting frequently.

Serves: 2
