Baked Salmon
Ingredients
2Kg Regal Scottish Whole Salmon, fresh or defrosted
Freshly ground pepper
1 Medium onion, thinly sliced
1 Lemon, thinly sliced
1 tsp dried parsley
1 tsp dried thyme
1 tbsp olive oil
Method
1) Preheat oven to 200C/400F/Gas Mark 6
2) Rinse the salmon inside out and pat it dry. Sprinkle the inside with salt and pepper, and stuff with half of the onion, half of the lemon, and all of the parsley.
3) Wrap the salmon in tin foil and sprinkle with salt, pepper, and thyme. Rub with olive oil.
4) Scatter the remaining onion and lemon slices on top and seal foil tightly. Place on a baking tray and bake for 40-45 minutes.
5) Cool in the foil on a rack. Remove onion and lemon, and skin if desired.
6) Serve baked salmon at room temperature.
