Herring with Grapefruit and Spring Onion

Ingredients

8 x Regal Herring or Mackerel Fillets, fresh or defrosted

1 x 5ml spoon (1 tsp) Grated lemon rind

Salt & pepper

1 Pink grapefruit, peeled and segmented, reserving juice

4 Spring onions, sliced


Method



1) Preheat the oven to 190°C/375°F/Gas Mark 5


2) Lay the fish skin side down. Season.


3) Arrange the grapefruit and spring onions on top of each fillet. Roll up and place in an ovenproof dish.


4) Spoon any excess onion and grapefruit around the fish. Pour over the reserved grapefruit juice.


5) Cover with foil and bake in the oven for 10-15 minutes. Remove the foil and bake for a further 5-10 minutes until golden brown.


6) Serve with seasonal vegetables and sliced, boiled potatoes.
