Mackerel with Exotic Fruit Sauce
Ingredients
4 x Regal Whole Mackerel or Herring, fresh or defrosted, heads removed
1 x 300g tin tropical fruit cocktail
30g (1oz) Raisins
Pinch of ground ginger
3 x 15ml spoon (3 tbsps) Water
Rind and juice of 1 lime
30g (1oz) Butter or margarineMethod
1) Preheat the grill
2) Place the fruit, raisins, ginger, water and lime juice in a pan. Heat for 5-7 minutes until softened. Add the butter and stir until melted.
3) Make 3-4 diagonal slashes across both sides of the mackerel and brush with some of the fruit mixture.
4) Cook under a moderate heat for 6-7 minutes, turning once.
5) Serve with the sauce, rice and salad.
