Seared Salmon with Warm Ginger and Lime Dressing

Serves 4


800g  Regal Salmon Fillet portioned into 4 equal pieces (or try using our delicious Organic Salmon – frozen and ready portioned, just defrost before cooking)
1tbsp oil
Seasoning to taste

Ginger and Lime Dressing

1 piece of preserved ginger in syrup finely chopped (or substitute fresh ginger if preferred)
Rind and juice of 2 limes
2 tbsps runny honey
1 tbsp water


Method



Remove the skin and any pin bones from the salmon if required.
Heat the oil in a griddle or frying pan, add the salmon portions and gently fry for 2-3 minutes on each side until cooked through. Season to taste and keep warm while you make the dressing.
Place the dressing ingredients into a small pan and heat gently until the honey is melted.
Serve the salmon with the dressing. Lovely accompanied with new potatoes and salad or seasonal vegetables.

A quick tasty main course with a zing!!
