Bacon Wrapped Trout
Ingredients
4 x Regal Trout Fish, fresh or defrosted
Juice of half a lemon
4 Thyme sprigs
8 Thin slices streaky bacon, rinds removed
Salt and pepper
Chopped fresh parsley and thyme sprigs to garnish
Lemon wedges to serve
1) Squeeze lemon juice over the skin and in the cavity of each fish, season all over, then put a thyme sprig in each cavity.
2) Stretch each bacon slice using the back of a knife, then wind 2 slices around each fish. Preheat the oven to 200°C/400°F/Gas 6.
3) Place the fish in a lightly greased, shallow baking dish with the loose ends of bacon tucked underneath to prevent them unwinding.
4) Bake in the oven for about 15-20 minutes, until the trout flesh flakes easily when tested with the point of a sharp knife and the bacon is crisp and is just beginning to brown.
5) To serve, sprinkle the trout with chopped parsley, then garnish with sprigs of thyme and accompany with lemon wedges.
