Curried Prawn Skewers

Ingredients



500g Regal Cooked King Prawns, defrosted

1 Can pineapple rings, cut into chunks

115g Butter, melted

30g Flour

1 Can coconut milk

60ml Milk

10g Mild curry powder

Salt and pepper to taste

Cocktail sticks, presoaked



Method



1) Stir the flour into the melted butter and warm through on the hob for 2 to 3 minutes, stirring continuously. Pour in the coconut milk and milk. Continue stirring until thickened. Mix in curry powder, salt and pepper. Remove from heat and place shrimp into the mixture.

2) Skewer each piece of shrimp with a cocktail stick and finish with a pineapple chunk.

3) Place on the BBQ for 2-3 minutes until warmed through.

Serves: 4-6
