Ingredients:
Cod Loin 80% Water as protective glaze 20%
Serving Suggestion:
Lay the fish on a bed of lightly fried chopped spring onions, thinly sliced carrots, sliced red peppers and sliced new potatoes. Pour over fish or vegetable stock to cover and simmer gently until the fish and vegetables are tender. Carefuly lift out the fish and vegetables and reduce the liquid to half. Add creme fraiche and bring back to the boil to thicken. Season as required and pour over the fish and vegetables. Serve with peas or mangetout. Try sprinkling the thinly pared rind of an orange over the fish before cooking for a different flavour.
