Serving Suggestion:
The firm texture o f monkfish makes it perfect for a sweet and sour dish with a difference. Make a sweet and sour sauce with chopped spring onions, the contents of a small can of pineapple chunks, and a small can of chopped tomatoes. Bring to the boil and simmer for a couple of minutes. Add the cubed fish and simmer until the fish is cooked through. Thicken the sauce with a paste of cornflour and soy sauce. Cook for a further 2 minutes until the sauce has thickened then serve over rice.
