Serving Suggestion:
Diagonally slash skin side of the sea bass fillets and press fresh rosemary into the cuts. Rub fillets with olive oil and sprinkle with sea salt. Place the fillets skin side down into a hot pan to sear the fillets. Transfer to a hot oven and cook for approximately 5 mins at 200°C/400°F/Gas mark 6 until cooked through. Serve with a squeeze of fresh lemon and a drizzle of olive oil.
